Gex Blue Cheese

It’s a non-pressed, uncooked marbled cheese made exclusively from the raw milk of Montbeliarde cattle.
With a very natural, mild taste, it features flavors with a scent of underbrush. It’s sold in wheels with a diameter of 34 cm, weighing 7 to 8 kg.
It dates back to the 13th century with the introduction of cheese making techniques by the monks of the Abbey of St. Claude in the Jura.
The appellation of origin (appellation d'origine contrôlée) was obtained in 1977.

The Abbey Cheese Shop

The Chezery-Forens cheese shop is one of the four cheese shops where the Gex Blue or Haut-Jura Blue is still produced. Thanks to the visitor’s gallery, you can follow the different artisan cheese making stages and walk through the maturing caves before ending up in a boutique where you can render... to its unbeatable flavor.
